We integrate this single origin cocoa butter with certified organic cane sugar and goat’s milk powder to create real, bean-to-bar white chocolate. We add Davao, Philippines cocoa nibs to the back of the bar–the cocoa nibs are from the same batch of beans that we use to make the bar itself, so in just one bite you experience the entire production and sourcing story. About the region: San Jose Del Tambo, at least 200 years old, is situated in the foothills of the Andes Mountains in the beautiful cloud forest. It is said that the Quechua Indians used this little village as a resting place before journeying further into the Andes. At Del Tambo, the hills rise sharply until the tops are obscured by low-hanging clouds. The Rio de San Miguela, a fast-flowing river, along with just the right climate provides the land for some of the best cocoa in the world.
