Sometimes in chocolate making, a batch of chocolate might slightly lose temper. When this happens we simply re-melt the batch and re-temper so that the texture, shine, and overall look of the bar are flawless. We lost temper on this batch but because this is a specialty bar where we added other ingredients (single origin Aqua Preta, Brazil coffee roasted by Intelligentisa) we are now unable to put it back through the process to re-melt and re-temper. So the flavor is right where we want it, but the look of the bar just isn't perfect enough to get packed and sold as a retail chocolate bar.
