The coffee origin changes with Intelligentsia's in-season sourcing. Currently, this bar features Intelligentsia’s directly sourced and organic coffee from Le Perlita, de Oaxaca, Mexico. Like us, Intelligentsia works directly with their producers to develop exceptional coffee, and invests continuously into realizing that quality in every cup.
About the cocoa region: Davao is situated on the Filipino island of Mindanao. We were the first chocolate makers to ever create a single-origin chocolate bar using cocoa beans from the Philippines. We began doing so in February 2009 after working for over a year and a half to directly source cocoa beans from this exclusive and exotic region of Davao. Since we began our direct trade relationship with Peter Cruz and the Davao cocoa farmers, the quality of the bean and post-harvest practices continue to improve, resulting in extraordinary chocolate.
About the coffee region: This coffee is produced by the CEPCO cooperative, led by Don Isidro Lopez, in the region of San Jose Zaragoza, Oaxaca, Mexico. The coffee itself provides a balanced, citrus like acidity with notes of Honeydew mellow, caramel, red grape, and a creamy, soft mouthfeel.
